Virtual Coffee

Hi friends!

It’s Tuesday, which means that it’s time for some Virtual Coffee.

If we were having coffee together today, we wouldn’t be at Starbucks, or some fancy café. We’d be sitting on my couch, since I’m home from work today. I’m actually home from work until Thursday, but I’ll get to that in a second.

If we were having coffee together today, I wouldn’t really be drinking coffee. I’d be drinking tea, or something else easy on my tummy. Like water. Or ginger ale.

Whatever I’d be drinking, I’d be drinking it out of my pretty new teacup that my auntie brought me this weekend.

If we were having coffee together today, I would tell you how much I love my life. I would tell you that I’ve been thanking God a lot for this wonderful life of mine, and all the amazing things in it. Like my husband and my dog and my family and my job and my home. I really have been feeling so appreciative of everything that I’ve been given lately.

But if we were having coffee, I would tell you that sometimes it’s hard to feel happy for things like my health. Because my health doesn’t seem to be doing so well these days.

That’s why I’m home from work today and tomorrow. I need to rest.

I need to recuperate. And try really hard to feel better.

2011 has been a rough year for my health. It’s involved two colonoscopies, an endoscopy, a course of aggressive antibiotics, a diagnosis of fibromyalgia, but no diagnosis of anything that may cause my inflamed large intestine. It’s involved migraines and depression and anxiety and chronic nausea and never ending pain.

But 2011 has been a really great year for everything else. It’s also involved a new puppy and a year of marriage. For these things, I’m thankful.


If we were having coffee together, I would tell you that I pick up my second CSA box this afternoon. Or, rather, my friend is picking it up and bringing it to me. This past week’s contained a somewhat difficult assortment of vegetables. But you’ll be happy to know that I used everything in that box! Here is an overview of my meals for the past week:

Tuesday: Chicken stir fry with broccoli, carrots, and mizuna

Wednesday: Pork tenderloin, mashed sweet potatoes, and roasted cauliflower and broccoli

Thursday: Roasted artichoke, fennel and onion salmon, lemon pasta, and sautéed mizuna and  tatsoi

Friday: Dinner out

Saturday: Lasagna and salad {romaine, radishes, tomato}

Sunday: Roasted chicken and mashed cauliflower

Monday: Chicken noodle soup with carrots and kale


If we were having coffee this week, I would tell you that I had an amazing weekend wine tasting with my husband and seeing my family. Here are a few fun pictures that I took:

The Reagan Library has a Christmas tree exhibit right now, with trees from each decade since the founding of our country! It’s a pretty amazing exhibit, and if you happen to find yourself in Simi Valley, I absolutely suggest it.
